Since my return to Holland, I didn't post anything on my blog, so so sorry! I hope you will all understand I had many things to do and I also spent a lot of time with my dear friends in Holland! Yesterday I celebrated my 'late' birthday together with them: I made a dinner with different dishes and they all liked it very much! They were so enthusiastic about the (cold) pasta salad I made, based upon a recipe from Albert Heijn. They all asked me the recipe of this dish so that's why I want to share this with you and them.
Recipe healthy cold pasta salad for 4 persons:
(per single serving): 575 kcal
300 gr pasta (you can use any sort you like, I used 'Pipe Rigate' from Grand' Italia)
1 piece (250 gr) of smoked chicken (you can also use smoked salmon or tuna)
2 tablespoons of mayonnaise
2 tablespoons of yoghurt
2 teaspoons of curry powder
sliced gherkins (around 10)
sliced spring onion (3 pieces)
3 tablespoons silver onions ('zilveruitjes')
A little bit of peper and salt
Cook the pasta al dente, according to the directions on the package. When the pasta is done, rinse with cold water, and cool. Meanwhile, boil the eggs in 8 minutes hard. When the eggs are ready; cool them properly in cold water. After, cut the eggs into pieces. Cut the tomatoes and smoked chicken small. Cut the gherkins and spring onions into thin slices.
Dressing: stir the mayonnaise, yoghurt, curry powder, peper and salt in a bowl.
Add everything sliced to the bowl with dressing: spring onions, silver onions, gherkins, tomatoes, smoked chicken, eggs and last but not least, the pasta! (you can also add small pieces of cucumber if you like!) Stir all together into a creamy pasta salad.
Delicious on a hot summer day but also delicious in winter with a tasty soup and a little baguette.
